- 1.5 lbs boneless chicken breast or thighs
- 1 tbsp olive oil
- 1.5 tbsp Cajun or blackened seasoning
- 16 oz rotini pasta
- 2 tbsp butter
- 3 cloves garlic, minced
- 1.5 cups heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 cup Parmesan cheese, freshly grated
- Salt and black pepper to taste
- Fresh parsley, finely chopped
Instructions
- Season and sear the chicken: Toss the chicken cubes with olive oil and Cajun seasoning. Heat your skillet over medium-high heat, add the chicken, and sear until golden brown, about 5-7 minutes. Remove and set aside.
- Cook the rotini: In a large pot of boiling salted water, cook the rotini according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining.
- Create the Alfredo sauce: In the same skillet, melt the butter over medium heat. Sauté the minced garlic until fragrant, about 1 minute. Whisk in the heavy cream, let simmer to thicken, then stir in the cheddar and Parmesan cheeses until smooth. Use reserved pasta water to adjust the consistency, seasoning with salt and pepper.
- Combine the pasta: Drain the rotini and add to the skillet with the sauce. Toss until well-coated, then top with the chicken and sprinkle with fresh parsley.
Notes
This dish can be made ahead of time; prepare the chicken and sauce separately and reheat before serving. Feel free to customize by adding sautéed vegetables or adjusting seasonings.
