- 1 lb boneless, skinless chicken breast or thighs
- 1 cup cooked white rice
- 1 cup carrots, peeled and finely chopped
- ½ cup green peas, cooked
- ½ cup green beans, chopped and cooked
- ½ cup plain chicken broth, onion- and garlic-free
- 1 teaspoon fish oil (optional)
Instructions
- Cook the chicken thoroughly in plain water until fully cooked. Do not add salt, onion, garlic, or seasonings.
- Let the chicken cool slightly, then shred or chop it into small pieces.
- Steam or boil the carrots, peas, and green beans until tender.
- Cook the rice according to package directions and allow it to cool slightly.
- Combine the chicken, rice, carrots, peas, and green beans in a large bowl.
- Add the onion- and garlic-free chicken broth and fish oil, if using.
- Mix everything together until evenly combined.
- Allow the mixture to cool completely before serving.
