Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering but not smoking.

- Whisk the eggs in a bowl with salt and pepper until fully combined.
- Create space for the eggs by pushing the potatoes to one side of the skillet; pour the eggs into the empty space.
- Scramble the eggs until fully set and mix them with the potatoes.
- Sprinkle the shredded cheddar cheese over the top and stir until melted.
- Mix in optional diced ham or bacon and serve hot garnished with green onions.
