  • 46 thick blocks of easily meltable cheese (Mozzarella, Fontina, or Gruyère)
  • 1/2 cup all-purpose flour
  • 1 cup Panko or fine breadcrumbs (for a crunchy crust)
  • Vegetable oil (for shallow frying)
  • Fresh parsley, finely chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, combine the ground chicken (or mashed potatoes), grated onion, minced garlic, egg, 1/4 cup breadcrumbs, salt, and pepper. Mix thoroughly until the mixture holds together well.
  2. Divide the mixture into 4 to 6 equal portions. Flatten one portion into a thick disc, placing a block of cheese in the center. Fold the edges over the cheese, sealing it completely.
  3. Lightly roll each formed patty in flour, shaking off the excess. Then roll them in the remaining breadcrumbs, pressing gently for adherence.
  4. Heat about 1/4 inch of oil in a skillet over medium heat. Once hot, add the cutlets carefully. Cook for about 5–6 minutes per side until the exterior is golden brown and the chicken is cooked through.
  5. Garnish with chopped parsley and serve hot with lemon wedges on the side.
