- 1 small onion, very finely grated
- 2 cloves garlic, minced
- 1 large egg
- 1/4 cup breadcrumbs (plus extra for coating)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (optional, for color)
- 4–6 thick blocks of easily meltable cheese (such as Mozzarella, Fontina, or Gruyère)
- 1/2 cup all-purpose flour
- 1 cup Panko or fine breadcrumbs (for a crunchy crust)
- Vegetable oil for shallow frying
- Fresh parsley, finely chopped (for garnish)
- Lemon wedges for serving
Instructions
- Begin by combining the ground chicken or mashed potatoes, grated onion, minced garlic, egg, 1/4 cup breadcrumbs, salt, and pepper in a large bowl.
- Mix thoroughly until the mixture holds together well.
- Divide the mixture into 4 to 6 equal portions and flatten one portion into a thick disc.
- Center a block of cheese in the disc and fold the edges over the cheese.
- Prepare for frying by rolling each formed patty in flour, shaking off any excess.
- Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
- Add your cutlets carefully and cook for about 5–6 minutes per side until golden brown.
- Garnish with freshly chopped parsley and serve hot with lemon wedges.
Notes
Make-ahead tips: Prepare and shape the cutlets in advance and chill in the fridge. For a lighter version, consider air frying the cutlets.
