  • 1/2 tsp black pepper
  • 1 tsp paprika (optional, for color)
  • 46 thick blocks of easily meltable cheese (such as Mozzarella, Fontina, or Gruyère)
  • 1/2 cup all-purpose flour
  • 1 cup Panko or fine breadcrumbs (for a crunchy crust)
  • Vegetable oil for shallow frying
  • Fresh parsley, finely chopped (for garnish)
  • Lemon wedges for serving

Instructions

  1. Begin by combining the ground chicken or mashed potatoes, grated onion, minced garlic, egg, 1/4 cup breadcrumbs, salt, and pepper in a large bowl.
  2. Mix thoroughly until the mixture holds together well.
  3. Divide the mixture into 4 to 6 equal portions and flatten one portion into a thick disc.
  4. Center a block of cheese in the disc and fold the edges over the cheese.
  5. Prepare for frying by rolling each formed patty in flour, shaking off any excess.
  6. Heat about 1/4 inch of vegetable oil in a skillet over medium heat.
  7. Add your cutlets carefully and cook for about 5–6 minutes per side until golden brown.
  8. Garnish with freshly chopped parsley and serve hot with lemon wedges.
