- 2 cups cooked chicken, shredded
- 1 cup queso cheese, shredded
- 8 corn tortillas
- 1 can (10 oz) enchilada sauce
- 1 cup black beans, rinsed and drained
- 1/2 cup chopped onion
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the shredded chicken, ½ cup of queso cheese, black beans, chopped onion, garlic powder, cumin, salt, and pepper in a mixing bowl.
- Warm the tortillas in a skillet or microwave until pliable.
- Spoon about ¼ cup of the chicken mixture into the center of each tortilla and roll them up tightly.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Pour the enchilada sauce over the top and sprinkle with the remaining queso cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
