Description

Delicious Cheese Chicken Enchiladas filled with shredded chicken, black beans, and gooey queso, topped with a zesty enchilada sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup queso cheese, shredded
  • 8 corn tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 cup black beans, rinsed and drained
  • 1/2 cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, ½ cup of queso cheese, black beans, chopped onion, garlic powder, cumin, salt, and pepper in a mixing bowl.
  3. Warm the tortillas in a skillet or microwave until pliable.
  4. Spoon about ¼ cup of the chicken mixture into the center of each tortilla and roll them up tightly.
  5. Place the rolled tortillas seam-side down in a greased baking dish.
  6. Pour the enchilada sauce over the top and sprinkle with the remaining queso cheese.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
  8. Garnish with chopped cilantro before serving.
