- 1 cup oat flour
- ½ cup finely grated carrot
- ½ cup finely grated apple (seeds and core removed)
- 1 large egg
- ¼ cup natural peanut butter (xylitol-free)
- 2 tablespoons unsweetened applesauce
- 1 tablespoon coconut oil, melted
- 1 teaspoon baking powder
- 2–3 tablespoons water, if needed
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease or line a 12-cup mini muffin pan.
- Whisk together the egg, peanut butter, applesauce, and melted coconut oil in a large bowl.
- Fold in the grated carrot and grated apple.
- Add the oat flour and baking powder, mixing until a thick batter forms. Add water if needed to adjust consistency.
- Spoon the batter evenly into the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, until the tops are firm and a toothpick inserted into the center comes out clean.
- Let the muffins cool completely before serving.
- Top with a small dollop of plain Greek yogurt and a sprinkle of grated carrot, if desired.
