Ingredients

  • 2 cups white rice
  • 1 lb boneless, skinless chicken thighs
  • 1 can full-fat coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped cilantro for garnish

Instructions

  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onion, diced bell pepper, and minced garlic. Sauté for about 5 minutes until softened and fragrant.
  3. Season the chicken thighs with salt, pepper, thyme, and paprika in a separate bowl.
  4. Place the seasoned chicken into the skillet, browning on both sides for about 5 minutes.
  5. Stir in the rice, coconut milk, and chicken broth. Bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 20 to 25 minutes until the rice absorbs all the liquid.
  7. Remove from heat and gently fluff the rice with a fork. Garnish with chopped cilantro.

Notes

You can prepare aromatics and marinate chicken ahead of time for deeper flavor. Adjust simmering times when using brown rice.
