- 2 cups white rice
- 1 lb boneless, skinless chicken thighs
- 1 can full-fat coconut milk
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped cilantro for garnish
Instructions
- Heat the oil in a large skillet over medium heat until shimmering.
- Add the chopped onion, diced bell pepper, and minced garlic. Sauté for about 5 minutes until softened and fragrant.
- Season the chicken thighs with salt, pepper, thyme, and paprika in a separate bowl.
- Place the seasoned chicken into the skillet, browning on both sides for about 5 minutes.
- Stir in the rice, coconut milk, and chicken broth. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 20 to 25 minutes until the rice absorbs all the liquid.
- Remove from heat and gently fluff the rice with a fork. Garnish with chopped cilantro.
Notes
You can prepare aromatics and marinate chicken ahead of time for deeper flavor. Adjust simmering times when using brown rice.
