Description

A delicious Cajun Blackened Chicken Alfredo combining smoky chicken with a rich, creamy sauce over pasta.


Ingredients

  • 2 large chicken breasts, sliced horizontally into cutlets
  • 1.5 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 8 oz spaghetti or linguine
  • 2 tbsp butter (for sauce)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup pasta water (reserved)
  • 1 cup Parmesan cheese, freshly grated
  • 1 tsp Cajun seasoning (plus more to taste)
  • Red pepper flakes (for garnish)
  • Fresh parsley (for garnish)

Instructions

  1. Prepare the Chicken: Pat the chicken cutlets dry and season both sides with Cajun seasoning and garlic powder. Heat olive oil and 1 tbsp of butter in a skillet over medium-high heat. Cook chicken for 4–5 minutes per side until a dark crust forms. Let it rest then slice for serving.
  2. Cook the Pasta: In a pot of boiling salted water, cook spaghetti or linguine according to package instructions. Reserve 1/2 cup pasta water before draining.
  3. Make the Alfredo Sauce: In the same skillet, lower heat and add the remaining butter. Add minced garlic and sauté for 1 minute. Pour in heavy cream and let it reduce slightly. Stir in Cajun seasoning and Parmesan cheese until melted and creamy.
  4. Combine and Serve: Toss the drained pasta with the sauce. Adjust sauce consistency using reserved pasta water as needed. Plate pasta, top with sliced chicken, drizzle with pan juices, and garnish with red pepper flakes and fresh parsley.

Notes

Allow chicken to rest after cooking for maximum juiciness. Customize the level of heat with your favorite Cajun seasoning.
