Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and brown sugar together until light and fluffy.
- Add the egg and vanilla, beating until combined.
- Combine the flour, cinnamon, baking soda, and salt in another bowl.
- Mix the dry ingredients into the wet mixture until just combined.
- Scoop generous spoonfuls of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes until the edges are golden but centers are soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Dough can be made ahead and refrigerated for up to three days. Store cookies in an airtight container at room temperature for up to a week.
