Description
A rich and creamy Butter Cauliflower dish that combines tender cauliflower with a luscious buttery sauce and aromatic spices.
Ingredients
Scale
- 1 head of cauliflower, cut into florets
- 2 tablespoons fresh lemon juice
- 2 tablespoons cornstarch
- 1 teaspoon ground cumin
- ½ teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons tomato paste
- 1 cup tomato sauce
- 1 cup vegetable broth
- ½ cup heavy cream or coconut milk
- 2 cups basmati rice
- Fresh cilantro, for garnish
- Greek yogurt, for serving
Instructions
- Prepare the cauliflower: In a large bowl, mix the lemon juice, cornstarch, cumin, turmeric, garam masala, and salt. Toss in the cauliflower florets until well-coated.
- Sear the cauliflower: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the cauliflower and cook for about 7-8 minutes until browned and softened.
- Finish cooking the cauliflower: Lower the heat, return the cauliflower to the bowl with the cornstarch mixture and toss again. Cook in the skillet for another 7-8 minutes until charred in spots and crisp-tender.
- Cook the aromatics: In the same skillet, add the remaining olive oil and butter. Sauté the onion until translucent, about 8 minutes. Stir in garlic, ginger, and tomato paste, cooking for 2 minutes.
- Add the spices: Incorporate the remaining turmeric, garam masala, salt, paprika, cinnamon, and optional cayenne, letting everything bloom for about a minute.
- Create the sauce: Pour in the tomato sauce and vegetable broth, bring to a gentle boil, then reduce to simmer for 15 minutes. Stir in heavy cream and return the cauliflower, soaking up the sauce.
- Garnish & serve: Garnish with fresh cilantro and serve over basmati rice, with Greek yogurt on the side.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. Adjust spices based on your heat preference.
