This Bourbon Peach Roasted Salmon is a delightful combination of sweet peaches and rich bourbon, creating a flavorful, tender dish that is perfect for any occasion.


Ingredients

  • 4 salmon filets, skin-on
  • 1/3 cup bourbon
  • 1/4 cup peach preserves
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 fresh peaches, sliced

Instructions

  1. Whisk together bourbon, peach preserves, olive oil, salt, and pepper in a mixing bowl to create a marinade.
  2. Place the salmon filets in a shallow dish and coat them with the marinade. Cover and refrigerate for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper and arrange the marinated salmon and sliced peaches on it.
  5. Roast for 12-15 minutes until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
  6. Spoon the caramelized juices over the salmon and serve warm.

Notes

Marinate the salmon overnight for extra flavor. You can also substitute peaches with apricots or nectarines if desired.
