- 4 salmon filets, skin-on
- 1/3 cup bourbon
- 1/4 cup peach preserves
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 fresh peaches, sliced
Instructions
- Whisk together bourbon, peach preserves, olive oil, salt, and pepper in a mixing bowl to create a marinade.
- Place the salmon filets in a shallow dish and coat them with the marinade. Cover and refrigerate for at least 30 minutes.
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper and arrange the marinated salmon and sliced peaches on it.
- Roast for 12-15 minutes until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
- Spoon the caramelized juices over the salmon and serve warm.
Notes
Marinate the salmon overnight for extra flavor. You can also substitute peaches with apricots or nectarines if desired.
