Description

Delicious blueberry pie bars that combine the flavors of summer with a crunchy oat crust and juicy filling.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup almond flour
  • 1 cup rolled oats
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8 inch baking dish.
  2. Combine 1 cup almond flour, 1 cup rolled oats, 1/2 cup maple syrup, 1/4 cup melted coconut oil, 1 tsp vanilla extract, 1 tsp baking powder, and 1/4 tsp salt in a mixing bowl. Mix until a cohesive dough forms.
  3. Press half of this dough firmly into the bottom of your prepared baking dish to form a crust.
  4. Spread 2 cups of fresh blueberries evenly over the crust.
  5. Crumble the remaining dough over the blueberries as a topping.
  6. Bake for 25-30 minutes, or until the top turns golden brown.
  7. Allow your blueberry pie bars to cool before cutting into squares.

Notes

Make-ahead tips: Prepare these bars a day in advance and store in the fridge. Can also be made in an air fryer for a quicker bake.
