- 2 cups fresh blueberries
- 1 cup almond flour
- 1 cup rolled oats
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8 inch baking dish.
- Combine 1 cup almond flour, 1 cup rolled oats, 1/2 cup maple syrup, 1/4 cup melted coconut oil, 1 tsp vanilla extract, 1 tsp baking powder, and 1/4 tsp salt in a mixing bowl. Mix until a cohesive dough forms.
- Press half of this dough firmly into the bottom of your prepared baking dish to form a crust.
- Spread 2 cups of fresh blueberries evenly over the crust.
- Crumble the remaining dough over the blueberries as a topping.
- Bake for 25-30 minutes, or until the top turns golden brown.
- Allow your blueberry pie bars to cool before cutting into squares.
Notes
Make-ahead tips: Prepare these bars a day in advance and store in the fridge. Can also be made in an air fryer for a quicker bake.
