- 2 to 3 lb chuck steak, cut into 1½-inch cubes
- 1 onion, chopped
- 4 celery stalks, chopped
- 4 large carrots, chopped
- 6 to 8 Yukon gold potatoes, peeled and cubed
- 3 cups beef broth
Instructions
- Start by placing the cubed chuck steak at the bottom of your slow cooker.
- Scatter the chopped onion, celery, carrots, and potatoes over the beef.
- Pour 3 cups of beef broth evenly over everything.
- Sprinkle in your favorite herbs.
- Cover the slow cooker and set it to cook on low for 7-8 hours or on high for 4-5 hours.
- Once the beef is tender, taste and adjust seasoning with salt and pepper.
Notes
For added depth of flavor, consider searing the beef before adding it to the slow cooker.
