Ingredients

  • 2 to 3 lb chuck steak, cut into -inch cubes
  • 1 onion, chopped
  • 4 celery stalks, chopped
  • 4 large carrots, chopped
  • 6 to 8 Yukon gold potatoes, peeled and cubed
  • 3 cups beef broth

Instructions

  1. Start by placing the cubed chuck steak at the bottom of your slow cooker.
  2. Scatter the chopped onion, celery, carrots, and potatoes over the beef.
  3. Pour 3 cups of beef broth evenly over everything.
  4. Sprinkle in your favorite herbs.
  5. Cover the slow cooker and set it to cook on low for 7-8 hours or on high for 4-5 hours.
  6. Once the beef is tender, taste and adjust seasoning with salt and pepper.

Notes

For added depth of flavor, consider searing the beef before adding it to the slow cooker.
