Ingredients

  • 1 lb (450 g) lean ground beef
  • 1 medium carrot, finely grated
  • 1 egg
  • ½ cup plain cooked oats
  • ¼ cup unsweetened pumpkin purée
  • 2 tbsp finely chopped fresh parsley

 

  • 1 tbsp water, if needed

Instructions

  • Preheat oven to 375°F (190°C).
  • Combine ground beef, grated carrot, egg, cooked oats, pumpkin purée, and parsley in a large bowl.
  • Mix gently until evenly combined, without overmixing.
  • Divide into small portions and press into a mini muffin pan or shape into small individual loaves.
  • Bake for 20–25 minutes, until fully cooked through.
  • Let cool completely before serving.

 

  • Store leftovers refrigerated up to 3 days, or freeze for longer storage.
