- 2 large Sweet Potatoes, diced
- 2 cups Cooked Chicken, shredded (rotisserie or grilled)
- 1/2 cup BBQ Sauce
- 1 Red Onion, chopped
- 1 cup Corn (frozen or fresh)
- 1 cup Cheddar Cheese, shredded
- 2 tablespoons Olive Oil
- Salt and Black Pepper, to taste
- 1 teaspoon Smoked Paprika
- 2 Green Onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sweet potatoes, season with salt, black pepper, and smoked paprika. Sauté for about 10-15 minutes until tender and golden brown.
- Add chopped red onion and corn. Sauté for an additional 5 minutes.
- Mix in shredded BBQ chicken and pour in BBQ sauce. Stir thoroughly, cooking together for around 5 minutes.
- Remove from heat and top with shredded cheddar cheese. Cover for a couple of minutes to allow cheese to melt. Garnish with sliced green onions before serving.
Notes
For extra flavor, consider marinating the chicken in BBQ sauce a few hours before cooking.
