Ingredients

  • 2 large Sweet Potatoes, diced
  • 2 cups Cooked Chicken, shredded (rotisserie or grilled)
  • 1/2 cup BBQ Sauce
  • 1 Red Onion, chopped
  • 1 cup Corn (frozen or fresh)
  • 1 cup Cheddar Cheese, shredded
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper, to taste
  • 1 teaspoon Smoked Paprika
  • 2 Green Onions, sliced (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sweet potatoes, season with salt, black pepper, and smoked paprika. Sauté for about 10-15 minutes until tender and golden brown.
  2. Add chopped red onion and corn. Sauté for an additional 5 minutes.
  3. Mix in shredded BBQ chicken and pour in BBQ sauce. Stir thoroughly, cooking together for around 5 minutes.
  4. Remove from heat and top with shredded cheddar cheese. Cover for a couple of minutes to allow cheese to melt. Garnish with sliced green onions before serving.

Notes

For extra flavor, consider marinating the chicken in BBQ sauce a few hours before cooking.
