- 1 cup barbecue sauce
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup corn (fresh, canned, or frozen)
- Optional toppings: cilantro, lime wedges, or sliced green onions
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper in a mixing bowl. Spread evenly on a baking sheet.
- Roast for 25-30 minutes, flipping halfway through.
- Season the chicken breasts with salt and pepper.
- Grill or cook the chicken in a skillet over medium-high heat for 6-7 minutes on each side.
- Brush the chicken with barbecue sauce during the last few minutes of cooking.
- Slice the chicken and serve over roasted sweet potatoes, topping with avocado and corn.
- Sprinkle optional toppings to finish.
