Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup corn (fresh, canned, or frozen)
  • Optional toppings: cilantro, lime wedges, or sliced green onions

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper in a mixing bowl. Spread evenly on a baking sheet.
  3. Roast for 25-30 minutes, flipping halfway through.
  4. Season the chicken breasts with salt and pepper.
  5. Grill or cook the chicken in a skillet over medium-high heat for 6-7 minutes on each side.
  6. Brush the chicken with barbecue sauce during the last few minutes of cooking.
  7. Slice the chicken and serve over roasted sweet potatoes, topping with avocado and corn.
