- 4 medium sweet potatoes
- 2 cups shredded BBQ chicken
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Sour cream or yogurt (optional, for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.
- Place them on a baking sheet and bake for 45-60 minutes until tender.
- While the sweet potatoes bake, mix shredded chicken with BBQ sauce in a bowl.
- Once done, let the sweet potatoes cool, then cut open lengthwise.
- Fluff the insides and drizzle with olive oil, seasoning with salt and pepper.
- Fill each potato with BBQ chicken mixture.
- Top with chopped green onions and serve with sour cream or yogurt, if desired.
