Description

Delicious sweet potatoes stuffed with smoky BBQ chicken, offering a perfect blend of sweet and savory flavors.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups shredded BBQ chicken
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sour cream or yogurt (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Place them on a baking sheet and bake for 45-60 minutes until tender.
  4. While the sweet potatoes bake, mix shredded chicken with BBQ sauce in a bowl.
  5. Once done, let the sweet potatoes cool, then cut open lengthwise.
  6. Fluff the insides and drizzle with olive oil, seasoning with salt and pepper.
  7. Fill each potato with BBQ chicken mixture.
  8. Top with chopped green onions and serve with sour cream or yogurt, if desired.
