  • 2 medium Carrots, shredded
  • 2 cups Broccoli (or other green vegetables)

  • 2 cups Cooked Jasmine Rice (or brown rice)
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha Sauce
  • 1 tablespoon Soy Sauce
  • 2 tablespoons Lime Juice
  • 2 tablespoons Green Onions, sliced
  • 1 tablespoon Sesame Seeds (or toasted sesame seeds)

Instructions

  1. Cook the Rice: Prepare 2 cups of jasmine or brown rice according to package instructions. Set aside once done.
  2. Heat the Skillet: Preheat your non-stick skillet over medium heat, adding the olive oil. Allow it to warm up, creating a shimmering surface.
  3. Sauté the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-6 minutes.
  4. Add the Vegetables: Toss in the sliced bell pepper, shredded carrots, and broccoli florets. Sauté for an additional 4-5 minutes, until softened.
  5. Make the Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, soy sauce, and lime juice.
  6. Combine Everything: Pour the sauce over the turkey and vegetables in the skillet, mixing until everything is coated. Stir for another minute to heat through.
  7. Assemble the Bowls: Spoon the savory turkey and veggie mixture over a serving of rice. Top with sliced green onions and sesame seeds.
