  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons oil for cooking
  • Sesame seeds
  • Additional garnishes (green onions, cilantro, avocado)
  • Extra vegetables (snap peas or bell peppers)

Instructions

  1. Begin by slicing the chicken breasts into bite-sized pieces. Chop vegetables, julienne the carrot, and prepare your garnishes.
  2. Heat your skillet or wok over medium-high heat and add 1 tablespoon of oil. Once hot, introduce the chicken pieces to the pan. Season with salt and pepper. Sauté for about 5-7 minutes until cooked through and golden.
  3. In the same skillet, add a splash of oil if needed. Toss in broccoli, red bell pepper, and carrots, stirring frequently for around 4-5 minutes.
  4. In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, and soy sauce. Whisk until creamy and well-blended.
  5. Return the chicken to the skillet with the sautéed veggies and gently toss to combine. Drizzle the prepared sauce over everything.
  6. In serving bowls, start with a scoop of cooked rice. Top with the chicken and vegetable mixture, garnishing with green onions, sesame seeds, and avocado slices.

Notes
