Ingredients

  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. Mash the ripe bananas until smooth but with a few chunks remaining for texture.
  3. Stir in the melted butter until combined with the bananas.
  4. Add the sugar, egg, and vanilla extract, mixing until well incorporated.
  5. Sprinkle the baking soda and salt over the mixture, then mix them in.
  6. Gradually add the flour, stirring until just combined.
  7. Fold in the chocolate chips and walnuts.
  8. Pour the batter into the muffin pan, filling each cavity about two-thirds full.
  9. Bake for 18-20 minutes until tops are golden and a toothpick comes out clean.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
