- 2 ripe bananas
- 1/2 cup melted butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
- Mash the ripe bananas until smooth but with a few chunks remaining for texture.
- Stir in the melted butter until combined with the bananas.
- Add the sugar, egg, and vanilla extract, mixing until well incorporated.
- Sprinkle the baking soda and salt over the mixture, then mix them in.
- Gradually add the flour, stirring until just combined.
- Fold in the chocolate chips and walnuts.
- Pour the batter into the muffin pan, filling each cavity about two-thirds full.
- Bake for 18-20 minutes until tops are golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
