- 2 large eggs
- 1 1/2 cups (150 g) oat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder (optional, for a savory version)
- 2 to 4 tablespoons milk, as needed
Instructions
- Preheat the oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- Cook the sweet potato until tender, then mash until smooth and let it cool slightly.
- In a large bowl, mash the avocado and mix it with the sweet potato and eggs until well combined.
- Add the oat flour, baking powder, salt and optional garlic powder. Stir until a thick batter forms.
- Add milk, one tablespoon at a time, if the mixture seems too dry.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 35 to 45 minutes, until the center is set and a toothpick comes out mostly clean.
- Cool the loaf in the pan for 10 minutes, then transfer it to a rack and cool completely before slicing.
