- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 cup diced apples
- For the streusel:
- 1/2 cup brown sugar
- 1/4 cup flour
- 1/4 cup oats
- 1 teaspoon ground cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl, whisking until well combined.
- Whisk together the melted butter, eggs, and milk in another bowl until frothy.
- Pour the wet ingredients into the dry mixture, stirring gently until just combined.
- Fold in the diced apples, making sure to keep them whole.
- Mix together the brown sugar, flour, oats, cinnamon, and cold butter for the streusel in a separate bowl until crumbly.
- Fill muffin cups halfway with batter and sprinkle streusel on top, then fill the cups 3/4 full with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool muffins in the tin for a few minutes before transferring them to a wire rack.
Notes
Make-ahead: Prepare the batter the night before and refrigerate. Add streusel in the morning before baking.
