- 2 tablespoons butter
- Pork medallions or chops
- 1 cup apple cider
- 3 cloves garlic, minced
- 2 teaspoons fresh thyme
- 2 teaspoons fresh rosemary
- 4 medium sweet potatoes, peeled and chopped
- Salt and pepper to taste
Instructions
- Prepare the pork: In a heavy skillet, melt 2 tablespoons of butter over medium heat. Season the pork medallions or chops generously with salt and pepper. Once hot, add the pork to the skillet, and let it brown on both sides, about 4–5 minutes per side, until golden and cooked through.
- Sauté the aromatics: Add the minced garlic and herbs to the skillet and cook for another minute.
- Add apple cider: Pour in the apple cider, stirring to combine. Let the mixture simmer for about 10 minutes, allowing the flavors to meld.
- Prepare the sweet potatoes: Peel and chop the sweet potatoes. Place them in a boiling salted water pot. Cook until tender, about 15–20 minutes. Drain and return to the pot.
- Mash and season: Add the remaining butter, salt, and pepper to the sweet potatoes. Mash until smooth and creamy.
- Plate and serve: Place a scoop of mashed sweet potatoes on each plate and layer the pork on top. Drizzle with the apple cider sauce.
Notes
Pork can be made in advance and reheated. Customize the herbs or add spices to sweet potatoes for extra flavor.
