- 1 medium sweet potato, grated

- Salt and pepper to taste
- Oil for frying
Instructions
- Grate the zucchinis and sweet potato, then place them in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated zucchini and sweet potato with flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten them slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
