- 4 medium zucchinis, sliced
- 1 pound ground turkey or beef
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped bell peppers
- 1/2 cup sliced mushrooms
- 1/4 cup sliced olives
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground turkey or beef over medium heat until browned.
- Add the marinara sauce, Italian seasoning, salt, and pepper to the meat and stir well.
- In a greased baking dish, layer half of the sliced zucchinis at the bottom.
- Spread half of the meat mixture over the zucchinis.
- Add half of the bell peppers, mushrooms, and olives on top.
- Sprinkle half of the mozzarella cheese over the vegetables.
- Repeat the layers with the remaining ingredients.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.

- Feel free to customize the toppings based on your preferences.
- This dish can be made ahead of time and stored in the refrigerator.
- For a vegetarian option, omit the meat and add more vegetables.
