Zucchini Pizza Casserole is a healthy and delicious alternative to traditional pizza, packed with fresh vegetables and flavorful toppings.


Ingredients

  • 4 medium zucchinis, sliced
  • 1 pound ground turkey or beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped bell peppers
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced olives
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground turkey or beef over medium heat until browned.
  3. Add the marinara sauce, Italian seasoning, salt, and pepper to the meat and stir well.
  4. In a greased baking dish, layer half of the sliced zucchinis at the bottom.
  5. Spread half of the meat mixture over the zucchinis.
  6. Add half of the bell peppers, mushrooms, and olives on top.
  7. Sprinkle half of the mozzarella cheese over the vegetables.
  8. Repeat the layers with the remaining ingredients.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  11. Let it cool for a few minutes before serving.
