- 8 corn or flour tortillas
- 2 cups shredded cabbage or coleslaw mix
- 1 cup chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges for serving

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the chopped cauliflower with smoky BBQ sauce ensuring even coating.
- Spread the sauced cauliflower on a lined baking sheet in a single layer.
- Roast for 25-30 minutes until tender and caramelized.
- Warm the tortillas in a skillet over medium heat for 30 seconds on each side.
- Assemble the tacos by piling roasted cauliflower, cabbage, avocado, and cilantro into each tortilla.
- Serve with lime wedges on the side, squeezing lime juice over tacos before eating.
Notes
Make the BBQ cauliflower in advance for quick taco assembly. Try air frying the cauliflower for a crispy texture.
