Ingredients

  • 4 medium sweet potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Bake the sweet potatoes for about 45-60 minutes, or until tender.
  4. Remove from the oven and let cool slightly.
  5. Cut the sweet potatoes in half lengthwise and scoop out the flesh into a bowl, leaving a small border.
  6. Add cheese, Greek yogurt, green onions, garlic powder, salt, and pepper to the sweet potato flesh and mix well.
  7. Stuff the mixture back into the sweet potato skins.
