- 4 medium sweet potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup green onions, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for about 45-60 minutes, or until tender.
- Remove from the oven and let cool slightly.
- Cut the sweet potatoes in half lengthwise and scoop out the flesh into a bowl, leaving a small border.
- Add cheese, Greek yogurt, green onions, garlic powder, salt, and pepper to the sweet potato flesh and mix well.
- Stuff the mixture back into the sweet potato skins.
- Top with additional cheese if desired.
- Bake for an additional 15-20 minutes until heated through and cheese is melted.
