Ingredients

  • 1 lb Italian sausage
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Stir in the chicken broth, diced tomatoes, white beans, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the cooked sausage and kale, and simmer for an additional 10 minutes.
  7. Serve hot, topped with Parmesan cheese if desired.
