- 1 lb Italian sausage
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups kale, chopped
- Parmesan cheese for serving (optional)
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Stir in the chicken broth, diced tomatoes, white beans, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the cooked sausage and kale, and simmer for an additional 10 minutes.
- Serve hot, topped with Parmesan cheese if desired.
Notes
- Feel free to use turkey sausage for a lighter option.
- This soup can be made ahead of time and freezes well.
