Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coconut cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1/4 cup shredded coconut, toasted
  • Cocoa powder for dusting

Instructions

  1. In a bowl, mix the cooled coffee with vanilla extract.
  2. In another bowl, combine coconut cream, mascarpone cheese, and sugar until smooth.
  3. Dip each ladyfinger into the coffee mixture briefly, then layer them in a serving dish.
  4. Spread half of the coconut cream mixture over the ladyfingers.
  5. Repeat the layers with the remaining ladyfingers and coconut cream mixture.
  6. Chill in the refrigerator for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder and sprinkle with toasted coconut.
