Description

Tom Kha Gai is a delicious Thai coconut chicken soup that combines the flavors of coconut milk, chicken, and aromatic herbs.


Ingredients

  • 400g chicken breast, sliced
  • 400ml coconut milk
  • 500ml chicken broth
  • 2 stalks lemongrass, chopped
  • 34 kaffir lime leaves
  • 34 slices galangal
  • 200g mushrooms, sliced
  • 23 Thai bird’s eye chilies, smashed
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a pot, combine chicken broth, lemongrass, kaffir lime leaves, and galangal. Bring to a boil.
  2. Add the sliced chicken and cook until it is no longer pink.
  3. Stir in the coconut milk and mushrooms, and simmer for about 5 minutes.
  4. Add the smashed chilies, fish sauce, and lime juice. Stir well.
  5. Remove from heat and garnish with fresh cilantro before serving.

Notes

  • Adjust the level of spiciness by adding more or fewer chilies.
  • For a vegetarian version, substitute chicken with tofu and use vegetable broth.
  • Serve with steamed rice for a complete meal.
