- 1 lb chicken breast, cut into bite-sized pieces
- 2 tablespoons green curry paste
- 1 can (400ml) coconut milk
- 1 cup chicken broth
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- Fresh basil leaves for garnish
Instructions
- In a large pan, heat a little oil over medium heat.
- Add the green curry paste and sauté for 1-2 minutes until fragrant.
- Add the chicken pieces and cook until they are no longer pink.
- Pour in the coconut milk and chicken broth, stirring to combine.
- Add the bell peppers and zucchini, and simmer for 10-15 minutes until the vegetables are tender.
- Stir in the fish sauce and sugar, adjusting to taste.
- Serve hot, garnished with fresh basil leaves.
Notes
- Adjust the amount of green curry paste to control the spiciness.
- Serve with jasmine rice for a complete meal.
