  • 4 bell peppers (any color)
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked rice (optional)
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing off the tops and removing the seeds.
  3. Cook the chicken in a skillet with olive oil, garlic powder, salt, and pepper until golden brown (about 5-7 minutes).
  4. Combine the chicken with pineapple chunks and teriyaki sauce; mix in cooked rice if desired.
  5. Stuff each bell pepper with the chicken mixture, pressing gently to pack it in.
  6. Arrange the stuffed peppers in a baking dish, standing them upright.
  7. Bake covered with foil for 25-30 minutes.
  8. Garnish with chopped green onions and serve warm.

Notes

Make ahead by preparing the filling a day in advance and stuffing just before baking. You can also use an air fryer for a crispy finish.
