- 1 pound chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup teriyaki sauce
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked rice (optional)
- Chopped green onions for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by slicing off the tops and removing the seeds.
- Cook the chicken in a skillet with olive oil, garlic powder, salt, and pepper until golden brown (about 5-7 minutes).
- Combine the chicken with pineapple chunks and teriyaki sauce; mix in cooked rice if desired.
- Stuff each bell pepper with the chicken mixture, pressing gently to pack it in.
- Arrange the stuffed peppers in a baking dish, standing them upright.
- Bake covered with foil for 25-30 minutes.
- Garnish with chopped green onions and serve warm.
Notes
Make ahead by preparing the filling a day in advance and stuffing just before baking. You can also use an air fryer for a crispy finish.
