- 8 oz pasta of choice
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the pasta according to package instructions; drain and set aside.
- In a bowl, toss the mixed vegetables with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
- Combine the roasted vegetables with the cooked pasta.
- Serve warm, topped with Parmesan cheese if desired.
