- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 2 cups salsa
- 3 cups tortilla chips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
- In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture, and half of the cheese.
- Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
- Top with sour cream and chopped green onions before serving.
Notes
- Feel free to add other toppings like jalapeños, olives, or avocado.
