- 1 cup sticky rice
- 1 1/4 cups coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, sliced
- Sesame seeds or mung beans for garnish (optional)
Instructions
- Prepare the Sticky Rice: Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- Steam the Rice: Drain the rice and line your steamer basket with cheesecloth. Steam for 20-30 minutes until tender.
- Make the Coconut Sauce: In a saucepan, combine the coconut milk, sugar, and salt. Heat over low until the sugar dissolves.
- Fluff and Combine: Transfer the steamed rice to a mixing bowl and pour 1 cup of coconut mixture over it. Stir gently and let it sit for 30 minutes.
- Assemble the Dish: On a plate, place sticky rice, arrange mango slices, and drizzle with remaining coconut sauce.
- Garnish: Add sesame seeds or mung beans if desired.
Notes
Make-ahead tips: Prepare rice and coconut mixture a day in advance. Can be reheated but serve mango fresh.
