Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons sweet chili sauce
  • 1 lime, juiced
  • 8 small corn tortillas
  • 2 cups green cabbage, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix shrimp with sweet chili sauce and lime juice. Let marinate for 15 minutes.
  2. In a separate bowl, combine cabbage, carrots, cilantro, olive oil, salt, and pepper to make the slaw.
  3. Heat a skillet over medium heat and cook the marinated shrimp for 2-3 minutes on each side until cooked through.
  4. Warm the corn tortillas in a separate pan or microwave.
  5. Assemble the tacos by placing shrimp on the tortillas and topping with cabbage slaw.
  6. Serve immediately with lime wedges on the side.

Notes

  • For extra heat, add sliced jalapeños to the tacos.
  • Can substitute shrimp with chicken or tofu for a different protein.
  • Leftover slaw can be stored in the refrigerator for up to 2 days.
