Instructions
- Rinse the sun-dried apricots under cold water and chop them into small pieces.
- In a saucepan, combine the chopped apricots, sugar, and water.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce the heat and let it simmer for about 30 minutes, or until the apricots are soft.
- Add the lemon juice and vanilla extract, stirring well to combine.
- Remove from heat and let it cool slightly before transferring to sterilized jars.
- Seal the jars and let them cool completely before storing in the refrigerator.
