Ingredients

  • 4 medium sweet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup Greek yogurt or sour cream
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. Once cooked, let the sweet potatoes cool slightly, then cut them in half lengthwise and scoop out some of the flesh, leaving a small border.
  4. In a bowl, mix the scooped sweet potato flesh with black beans, corn, cheese, Greek yogurt, cumin, paprika, salt, and pepper.
  5. Fill the sweet potato skins with the mixture and place them back in the oven for an additional 15-20 minutes until heated through and cheese is melted.
  6. Garnish with chopped green onions before serving.
