- 4 medium sweet potatoes
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup Greek yogurt or sour cream
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- Once cooked, let the sweet potatoes cool slightly, then cut them in half lengthwise and scoop out some of the flesh, leaving a small border.
- In a bowl, mix the scooped sweet potato flesh with black beans, corn, cheese, Greek yogurt, cumin, paprika, salt, and pepper.
- Fill the sweet potato skins with the mixture and place them back in the oven for an additional 15-20 minutes until heated through and cheese is melted.
- Garnish with chopped green onions before serving.
