Instructions
- Preheat the oven to 350°F (175°C).
- Carefully slice each date lengthwise and remove the pit.
- In a bowl, mix the softened goat cheese and chopped pistachios until well combined.
- Stuff each date with the goat cheese mixture.
- Place the stuffed dates on a baking sheet and drizzle with honey if desired.
- Bake for 10-12 minutes until the cheese is warm and slightly golden.
- Garnish with fresh mint leaves before serving.
