Delicious strawberry daiquiri cupcakes topped with a rum glaze, perfect for a sweet treat.

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/2 cup fresh strawberries, pureed
- 1 tablespoon lime juice
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup rum (for glaze)
- 1 cup powdered sugar (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk, strawberry puree, and lime juice.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill the cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let the cupcakes cool completely before glazing.
- For the glaze, mix the powdered sugar and rum until smooth and drizzle over the cooled cupcakes.
Notes
- For a non-alcoholic version, omit the rum in the glaze.
- Fresh strawberries can be substituted with frozen, but ensure they are thawed and drained.
- Store cupcakes in an airtight container for up to 3 days.
