Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk, strawberry puree, and lime juice.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool completely before glazing.
  10. For the glaze, mix the powdered sugar and rum until smooth and drizzle over the cooled cupcakes.

  • For a non-alcoholic version, omit the rum in the glaze.
  • Fresh strawberries can be substituted with frozen, but ensure they are thawed and drained.
