- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, chopped
- ½ cup strawberry jam
- 1 cup crushed freeze-dried strawberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking pan.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Spread the cheesecake mixture over the crust in the baking pan.
- In a small saucepan, heat the strawberry jam until it becomes liquid, then pour it over the cheesecake layer.
- Sprinkle chopped strawberries and crushed freeze-dried strawberries on top.
- Bake for 25-30 minutes, then let cool to room temperature.
- Refrigerate for at least 4 hours before slicing into bars.
