  • 1/4 cup pure maple syrup
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 3 green onions, sliced (for garnish)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together maple syrup, Sriracha sauce, minced garlic, grated ginger, soy sauce, salt, and pepper. Place chicken breasts in the mixture, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes; for even more flavor, you can marinate overnight.
  2. Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot over medium heat, combine the rinsed rice with coconut milk and an equal amount of water. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer until the rice absorbs all the liquid, usually about 15-20 minutes.
  3. Sear the Chicken: Heat a drizzle of oil in a large skillet over medium-high heat. Add the marinated chicken breasts to the skillet, along with the remaining marinade. Sear the chicken for 6-7 minutes on each side until it turns golden brown and is cooked through.
  4. Add Sauce: Once the chicken is cooked, pour the reserved marinade into the skillet. Let it simmer on low for 5-7 minutes until the sauce thickens.
  5. Fluff the Rice: When the rice is done cooking, take a fork and gently fluff the grains.
  6. Garnish & Serve: Arrange the chicken atop the coconut rice, finishing with a sprinkle of green onions and a squeeze of lime.
