- 0.75 lb boneless, skinless chicken breasts
- ¼ cup lime juice
- ½ tsp chili powder
- ½ tsp onion powder
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp salt
- 3 tbsp olive oil
- 1 Tbsp chipotle pepper in adobo
- 4 large tortillas
- 1 cup uncooked rice
- 1 small red bell pepper, sliced
- 1 jalapeño, sliced
- ½ red onion, sliced
- 3 garlic cloves, minced
- 1 tsp olive oil, for sautéing
- ¾ cup corn kernels
- 1 cup black beans
- ¼ cup cotija cheese
- ⅓ cup sour cream
- 1½ Tbsp honey
- ½–1 Tbsp chipotle peppers in adobo
- 1 Tbsp lime juice
- 3 Tbsp fresh cilantro, chopped
- 1–2 Tbsp water
- ¼ tsp salt
Instructions
- Marinate the chicken: Dice chicken breasts and toss with lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in adobo. Marinate for at least 15 minutes.
- Cook the rice: Prepare rice according to package instructions.
- Sauté the chicken: Heat a nonstick skillet over medium heat, add marinated chicken, and sauté for 12 to 15 minutes until cooked through. Remove and set aside.
- Sauté the vegetables: In the same skillet, add 1 tsp olive oil, toss in red bell pepper, onion, and jalapeño; sauté until softened, then add garlic and cook for an additional minute.
- Combine ingredients: Return chicken to the skillet, mix to combine and warm through.
- Assemble the wraps: Lay a tortilla flat, add rice, chicken mixture, black beans, corn, cotija cheese, and a dollop of chipotle sauce. Roll tightly and tuck the sides in.
- Serve immediately: Cut in half and serve with extra chipotle sauce.
Notes
For best flavor, marinate the chicken longer than 15 minutes. Customize with different vegetables or proteins as desired.
