Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, sliced
  • 1 jalapeño, sliced
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil, for sautéing
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½1 Tbsp chipotle peppers in adobo
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water
  • ¼ tsp salt

Instructions

  1. Marinate the chicken: Dice chicken breasts and toss with lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, salt, and chipotle pepper in adobo. Marinate for at least 15 minutes.
  2. Cook the rice: Prepare rice according to package instructions.
  3. Sauté the chicken: Heat a nonstick skillet over medium heat, add marinated chicken, and sauté for 12 to 15 minutes until cooked through. Remove and set aside.
  4. Sauté the vegetables: In the same skillet, add 1 tsp olive oil, toss in red bell pepper, onion, and jalapeño; sauté until softened, then add garlic and cook for an additional minute.
  5. Combine ingredients: Return chicken to the skillet, mix to combine and warm through.
  6. Assemble the wraps: Lay a tortilla flat, add rice, chicken mixture, black beans, corn, cotija cheese, and a dollop of chipotle sauce. Roll tightly and tuck the sides in.
  7. Serve immediately: Cut in half and serve with extra chipotle sauce.

Notes

For best flavor, marinate the chicken longer than 15 minutes. Customize with different vegetables or proteins as desired.
