- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice (or brown rice)
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine the diced onion, minced garlic, rice, chicken broth, lemon juice, and lemon zest in your slow cooker. Mix gently to combine all the ingredients.
- Rinse the chicken breasts under cold water and season generously with thyme, rosemary, salt, and pepper. Place seasoned chicken on top of the rice mixture.
- Cover your slow cooker and set it to low. Cook for 6-7 hours, or until the chicken is cooked through and the rice is tender.
- Fluff the rice with a fork once cooking time is up, and slice the chicken into thick portions.
- Serve each plate garnished with fresh parsley.
