Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice (or brown rice)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the diced onion, minced garlic, rice, chicken broth, lemon juice, and lemon zest in your slow cooker. Mix gently to combine all the ingredients.
  2. Rinse the chicken breasts under cold water and season generously with thyme, rosemary, salt, and pepper. Place seasoned chicken on top of the rice mixture.
  3. Cover your slow cooker and set it to low. Cook for 6-7 hours, or until the chicken is cooked through and the rice is tender.
  4. Fluff the rice with a fork once cooking time is up, and slice the chicken into thick portions.
  5. Serve each plate garnished with fresh parsley.
