Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 medium zucchinis, sliced into half-moons
  • 1/4 cup hot honey
  • 3 tablespoons soy sauce
  • 2 tablespoons garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the marinade by mixing hot honey, soy sauce, minced garlic, salt, pepper, paprika, and onion powder.
  3. Marinate the chicken thighs in half of the marinade for at least 10 minutes.
  4. Slice the zucchinis into half-moons and coat them with olive oil, salt, and pepper.
  5. Arrange the marinated chicken on a baking sheet and scatter the zucchini around it.
  6. Drizzle the remaining marinade over the chicken and zucchini.
  7. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  8. Garnish with chopped parsley before serving.

Notes

Marinate chicken up to 24 hours in advance for deeper flavor. Avoid overcrowding the baking sheet for best results.
