A delicious and comforting baked herb chicken casserole that is perfect for family dinners.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 cup cream of chicken soup
- 1 cup chicken broth
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, chicken broth, mixed vegetables, thyme, rosemary, garlic powder, onion powder, salt, and pepper.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to use leftover chicken or rotisserie chicken for convenience.
- You can substitute the mixed vegetables with your favorite veggies.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
