- 1/2 cup cooked rice
- 1/4 cup chopped fresh parsley
- 1 egg

- 6 cups beef broth
- 1 can diced tomatoes
- 1 cup carrots, diced
- 1 cup zucchini, diced
- 1/2 cup corn
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- In a large bowl, combine ground beef, cooked rice, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix well and form into meatballs.
- In a large pot, bring beef broth to a boil.
- Add diced tomatoes, carrots, zucchini, corn, cumin, and chili powder to the pot.
- Carefully drop the meatballs into the boiling broth.
- Reduce heat and let simmer for 30 minutes, or until meatballs are cooked through and vegetables are tender.
- Serve hot and enjoy!
