- 4 medium potatoes, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 4 eggs

Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat and add the diced potatoes. Cook until they are golden brown and tender.
- Add the chopped onion and bell pepper to the skillet and sauté until softened.
- In a separate pan, cook the sausage until browned and cooked through.
- In a bowl, whisk the eggs and season with salt and pepper. Scramble the eggs in the skillet until fully cooked.
- Combine the cooked sausage, potatoes, vegetables, and scrambled eggs in meal prep containers.
- Allow to cool before sealing and refrigerating for up to 5 days.
