Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
- In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the skillet with the sausage and scramble until fully cooked.
- Roll out the puff pastry sheets on a floured surface and cut into squares.
- Place a spoonful of the sausage and egg mixture on one half of each pastry square, then sprinkle with cheese.
- Fold the pastry over to create a pocket and seal the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
